In this new episode, we’re serving up a sandwich made with marinated chicken and a slightly spicy base—just to take your taste buds on a little journey.
First, let’s start with the chicken marinade. For this, you’ll need the following ingredients: a clove of garlic, a piece of ginger, lime, cottage cheese, salt, and a chicken breast.

First, finely chop the ginger and garlic and place them in a bowl. Squeeze the lime with your hands to extract the juice. Add a spoonful of plain yogurt. Slice the chicken breast into thin strips so they’ll be easy to layer in the sandwich later, and add them to the bowl. Be sure to season everything well with salt. To give your marinade even more flavor, add the lime zest. Mix everything together and let the chicken marinate for at least half an hour (but if you’re not in a hurry like us, you can leave it overnight—it’ll taste even better)!!

Then all you have to do is cook the chicken. You’ll see, your kitchen will smell amazing!!

Let everything cool, then it’s time to assemble the sandwich. Grab an avocado, some cherry tomatoes, fried onions, and of course your chili paste (two options: either make the Punta Allen version, or if you didn’t have time, I recommend Ti-Capsi’s salsa verde—it’s a real gem).
Slice your bread and remove some of the crumb since it’s going to be pretty filling. Spread the paste on both sides. Add your chicken slices, then top with avocado slices.

Cut the cherry tomatoes in half and add them to the sandwich. Finally, the finishing touch that adds a bit of crunch: the fried onions.

Close the lid, and you’re ready for a culinary escape.
