It’s world-famous—it’s THE sandwich. And for good reason: just four ingredients, super easy to make, quick to whip up, and you’re all set for a tasty snack. But while we were chatting, we came up with the idea of giving it a Mouching twist.
We’re going to suggest something a little on the wild side, because the only way to really jazz up this sandwich is to get creative with the butter. So I went to see my favorite butcher and asked him for marrow bones. He was happy to oblige. For the rest of the ingredients, you’ll need: flat-leaf parsley, garlic, salt, pepper, ham, pickles, and bread.
Let’s start with the marrow bones. Soak them in cold water (for 2 hours) to draw out the blood. Then, pat them dry with paper towels and place them in an oven-safe dish, season with salt and pepper, and bake for 20 minutes at 200°C.


Meanwhile, take the garlic and parsley and chop them finely. Add them to the butter.


After 20 minutes, remove the bones from the oven and scoop out the marrow, which you’ll then add to the butter (wait a moment for it to cool). Mix everything together and refrigerate.

Now it’s time to assemble the sandwich. Cut the bread in half, spread butter on both sides, add the ham and pickles, and close it up.
